Job Description
POSITION SUMMARY:
The RAHS/RAMS Cafeteria Manager will
perform a variety of tasks, including: food storage, preparation, serving,
clean-up, POS (point-of-sale) meal/sales accounting (secondary only), following
recipes, and completing production records daily for school breakfast and lunch
production. Follow meal programming nutritional and food safety guidelines as
established by Federal-USDA, State and District mandates.
COMPENSATION:
SCHEDULE: M-F 6:00 AM - 3:00 PM, Subject
to change depending on department needs
WORK CALENDAR: 180 days per year
(You get summers off, winter break off,
spring break off, thanksgiving week off, 6 paid holidays included)
MINIMUM QUALIFICATIONS:
-
HS
Diploma or equivalent, or at least two years of custodial experience may
substitute for the education requirement.

Nutrition
services experience in a school setting.

Ability
to communicate and maintain good working relations with other employees,
students, community representatives, school staff and nutrition services
management.

Initiative
and ability to follow directions and training from the Culinary Director, and
make sound and logical decisions.

Ability
to: follow required production planners for effective food preparation and
service; read and comprehend recipes and directions for equipment use.

Maintain
a valid Food Handlers Card.
-
Customer
service skills.
-
Possess
or receive training on all relevant systems and forms of data entry, inventory,
ordering, etc.

Serve

MAJOR
DUTIES AND RESPONSIBILITIES
Food Preparation:
-
Store
food and equipment in specified locations.
-
Read
and comprehend recipes and follow directions for numbers of meals to be served.
-
Gather
cooking materials; weigh, measure and mix ingredients.
-
Slice,
chop, dice and otherwise prepare food products for cooking.
-
Assist
with food preparation/cooking in accordance with program standards, which
include food safety standards (i.e.: food stored/prepared/cooked /held/served
at proper temperatures).

Follow
required production planners for effective food preparation and service; read
and comprehend recipes and directions for equipment use.
-
Learn
and follow regulations/guidelines of School Meal Programs and other associated
programs.
Food Service, Cleaning, and Maintenance:
-
Provide
assistance/help to prepare, place and present menus according to set standards,
which include merchandising/marketing standards.

Serve
food according to set standards that include portion control and
customer-service standards.

Provide
assistance to secure food, supplies and equipment; protect against loss, theft,
or abuse.

Assist
in cleaning cooking surfaces, floors, materials, utensils, pots and pans, etc.
-
Participate
in salad bar set-up and dishwashing.
-
Assist
with maintaining program record requirements.

Sub/fill-in
other positions when needed.

Attend
scheduled training.
Perform other duties as assigned by
Nutrition Services Management.
